Chapter one · Tea from Yunnan

نوريّة Nouriye

The finest of each kind, made by hand.

Nouriye is a small selection of traditionally made fine foods for the Gulf. We begin with tea from Yunnan, picked and made by hand by families we know.

Named for my mother

Nouriye is my mother's name. In Kurdish she is Nuriyê; in Arabic, Noura. I chose it as a dedication to her and to what she stands for: generosity that gives without counting, warmth, strength of character, and a closeness to nature.

My name is Mohamed, though most people who know me call me Juan. I grew up with three languages at one table: Kurdish, Turkish and Arabic. English came later, then Germany, and I have hardly stopped travelling since. For the past three years I have been exploring Asia, China above all, and learning Chinese along the way.

Wherever I go, I see people come together over the same things: food, music and knowledge. Nouriye is how I share the best of what I find: food made by hand, the traditional way, far from mass production. It is for anyone who cares where their food comes from.

Our Standard

Nouriye is a standard before it is a logo. A tea carries our name only if it meets all five.

  1. We know the family.

Each tea comes from one family producer we have visited in person. We have walked to their trees in the forest and seen how they work. Three teas, three families, each making tea for generations.

  2. We know the harvest.

Every tea is sold with its harvest year and season.

  3. Made by hand.

From picking to drying, every step is done by hand. Where a tea is pressed, an old-style press is the only machine involved. Nothing is mass-produced.

  4. Nothing added.

No flavourings, no additives, no blends. Only the leaf.

  5. Chosen by taste.

We taste every tea ourselves. If it is not the best of its kind we have tasted, it does not carry our name.
